Callie Swanson learned to make copper-kettle fudge during the lockdown of 2020, at twenty-one. Her family had just restored Burlington Station, a 7,000 square foot historic train depot on the North Shore of Lake Superior, complete with a 130 foot mural of the family's history and 5,000 feet of model train track running through the retail floor. She turned the gift shop into a working candy kitchen and opened on Memorial Day 2021. Three years later the kitchen ships boxes across the country, still made the same way: four ingredients, two hours in the kettle, cut by hand, and shipped within 48 hours so it never sits in a warehouse.
