I was 21 and stuck at home like everyone else in the spring of 2020. My family had just finished restoring Burlington Station, a 7,000 square foot historic train depot on the North Shore of Lake Superior, with a 130 foot mural of our family's history painted across the walls and 5,000 feet of model train track running through the floor. It was supposed to be a gift shop. I turned it into a candy kitchen.

I taught myself copper-kettle fudge from scratch. Four ingredients. Two hours per batch. Cut by hand. We opened on Memorial Day 2021. I named the first flavor Legally Addictive Fudge, because that is what people kept calling it. Three years later we still make every batch the same way, and ship it within 48 hours so it never sits in a warehouse.
